1 tsp
butter or margarine or use a good quality, non-stick cooking spray
Method :
Lightly beat together the eggs,
milk, pepper and parsley, if liked.
In a small saucepan or heavy
bottomed frying pan, melt the butter or margarine over low to medium
heat, or spray the pan well with non-stick cooking spray.
Add the egg mixture to the pan.
Using a wooden spoon, stir gently
over low to medium heat, until the egg begins to thicken.
Cook the egg, stirring constantly,
until it is still very moist but does not run when the pan is
tilted.
Remove from the pan.
Do not overcook the egg or it will
toughen.
Serve immediately.
Serve Scrambled Eggs on a slice of
wholemeal toast.
Tip :
A good scrambled egg is firm but moist
and creamy. To obtain perfect results, it is important to cook it
slowly, over gentle heat. Egg toughens and becomes stringy or watery if
you cook it over high heat. Serves 1 - 2
