Line a flat tray with greaseproof
paper and brush lightly with oil. Melt chocolate over hot water until
just melted, ensuring chocolate is not overheated and no moisture gets
into it. Spread chocolate over oil on paper to
form a thin, even coating. Leave in a cool place to set. Using a shaped cutter or a knife, cut
chocolate into desired shape. Chill chocolate before lifting off
shapes. Store chocolate shapes in a cool, dry
place.
