Alfalfa Honey Cakes Recipes

Ingredients :

225 g wholemeal flour

50 g demerara sugar

1 tsp baking powder

pinch of ground cinnamon

pinch of salt

50 g clear honey

1 egg

12 tbsp milk

50 g melted butter

50 g alfalfa spouts

50 g chopped walnuts

Method :
  1. Preheat oven to 400F, Gas 6.
  2. Grease 24 individual cake tins.
  3. Stir together flour, sugar, baking powder, cinnamon and salt.
  4. Beat together the honey, egg, milk and butter and beat into the dry ingredients.
  5. Chop the alfalfa sprouts and add to the mixture with the walnuts.
  6. Divide the mixture between the cake tins, and bake for 20 minutes.
  7. Cool on a wire rack.

Small cakes with a crunchy texture which are good with milk or hot drink.

Serves 4 - 6
