Method :

Use a deep bowl and electric beater to
beat the egg whites until stiff but not "dry".

Fold in the ground almonds and sugar.

Transfer to a large bowl over a pan of
simmering water.

Cover and cook for 20 minutes.

Use a tablespoon to scoop out egg
shaped spoonfuls and place them on a lightly buttered and floured
cookie sheet.

Bake in a preheated oven at 350oF
(180oC), Gas 4 for about 45 minutes or until they are
golden brown.

Leave to cool before serving.

Note :
These can be served in
their own with a sweet dessert wine such as Vin Santo or together with
the Proto Cookies.
