Mash the potato with the butter
and salt, then work in the flour.
Roll the mixture to a round.
Peel the apples and chop them into
small dice.
Spread them over one half of the
potato round.
Sprinkle over sugar to taste and
dot with the butter.
Fold the other half of the potato
round over the apple.
Heat a griddle or heavy based
frying pan.
Slide the apple cake onto the
griddle and cook for several minutes on each side, until lightly
browned.
Serves 2
Double the quantity of ingredients. Roll
out two potato rounds. Spread the apple over one round and place
the other round on top. If preferred, omit the sugar and butter, cook
the cake, then split it open across the top and add the sugar and butter
through the opening. For potato cakes, double the quantity for the
potato round, roll out to a round or square, about 6 mm or 1/4" thick.
Cut into four and cook on a griddle until browned on each side.
