Applesauce Cake Recipe

Ingredients :

1 cup seedless raisins, cut up

1 cup chopped walnuts

2 cups sifted all-purpose flour

1 tsp salt

1 tsp baking soda

1 tsp cinnamon

1/4 tsp cloves

1/2 cup soft shortening

3/4 cup sugar

1 egg

1 cup canned, sweetened applesauce

Method :

Heat oven to 350F (175C). Grease and flour a loaf pan, 9 x 5 x 3-inch (23 x 12.5 x 7.5-cm). Combine raisins and nuts in a bowl. Sift flour, salt, baking soda, cinnamon and cloves together over fruit-nut mixture and toss together. Beat shortening, sugar and egg together until fluffy. Add flour mixture alternately with applesauce, beating to blend well after each addition. Spoon into prepared pan. Bake about 75 minutes or until a toothpick stuck in the centre comes out clean. Cool in pan a few minutes and then turn out on rack to cool.

Makes 1 loaf cake
