Austrian Almond Swirl Cakes Recipe

Ingredients : |
200 g
plain flour
25 g
cornflour
225 g
butter, at kitchen temperature and soft
75 g icing
sugar, sifted
1 tsp
vanilla essence
25 - 40 g
flaked almonds
6 glace
cherries, halved
extra
icing sugar |
Method :
- Place 12 paper cake cases in ungreased
bun tins.
- Set oven to 350F, Gas 4.
- Sift flour and cornflour into a bowl.
- In separate bowl, beat butter until
very soft and creamy.
- Gradually beat in sugar followed by
essence.
- Fork in flour.
- Transfer mixture into an icing bag
fitted with a 1.25 cm star shaped tube.
- Pipe swirls of mixture into the 12
paper cases.
- Press almonds gently into tops of
each, leaving gaps in centers.
- Fill with cherry halves, cut sides
down.
- Bake for 20-25 minutes or until pale
gold.
- Remove to a cooling rack, leave until
cold and sift icing sugar over top of each.
- Store in an airtight container.
