Basic Sponge Sandwich Recipes

Ingredients :

3/4 cup

1 cup

3 tbsp

1/2 cup

1 x 300ml

2 tbsp

eggs, separated

caster sugar

self-raising flour, sifted

very hot water

strawberry jam (or other flavor)

carton thickened cream, whipped

icing sugar

Method :
  1. Preheat oven to 180C, grease and flour two 20cm sandwich cake tins.
  2. Place egg whites in a clean, dry bowl.
  3. Beat until stiff peaks form.
  4. Gradually beat in sugar, beat until thick and glossy.
  5. Fold through egg yolks then flour and water.
  6. Divide mixture evenly between prepared tins. 
  7. Bake for 10-15 minutes or until cake springs back when touched.
  8. Remove from tins, cool on a tea-towel placed on a cake rack.
  9. When cool, spread with ham then cream.
  10. Sandwich layers together.
  11. Decorate top of cake with sifted icing sugar.
