eggs, separated
caster sugar
self-raising flour, sifted
very hot water
strawberry jam (or other flavor)
carton thickened cream, whipped
icing sugar

Method :
- Preheat oven to 180C, grease and
flour two 20cm sandwich cake tins.
- Place egg whites in a clean, dry
bowl.
- Beat until stiff peaks form.
- Gradually beat in sugar, beat
until thick and glossy.
- Fold through egg yolks then flour
and water.
- Divide mixture evenly between
prepared tins.
- Bake for 10-15 minutes or until
cake springs back when touched.
- Remove from tins, cool on a
tea-towel placed on a cake rack.
- When cool, spread with ham then
cream.
- Sandwich layers together.
- Decorate top of cake with sifted
icing sugar.
