Cherry Clafouti Recipe

Ingredients :

whole wheat flour

light Muscovado sugar

eggs, separated

extra egg yolk

vegetable oil

milk

fresh cherries, stoned

salt

a large pinch of ground cinnamon

caster sugar, to dust (optional)

Method :
  1. Mix the flour, salt, sugar and cinnamon.

  2. Beat in the egg yolks and oil and gradually beat in the milk.

  3. Stiffly whisk the egg whites and fold them into the batter.

  4. Arrange the cherries in a greased baking dish and pour on the batter.

  5. Bake in the oven at 350oF (180oC), Gas 4 for 40-45 minutes, until the batter is firm and well risen.

  6. Serve hot.

Serves 4

Note : Reserve one or two bunches of fresh cherries to decorate the dish.
