Ingredients :

2 cups all purpose flour

1.5 tea spoon baking soda

1/3 cup margarine, softened

1/2 cup honey

1/4 cup sugar

1 table spoon grated lemon peel

1/4 cup Egg Beaters

Lemon Glaze, optional (recipe follows)

Method :

1. In a small bowl, combine flour and baking soda; set aside
2. In a large bowl, with electric mixer at medium speed, beat margarine, honey, sugar and lemon peel until light and fluffy
3. Beat in egg product
4. Gradually stir in flour mixture until blended
5. Drop dough by rounded teaspoons onto lightly greased baking sheet; bake at 350 degrees 7-8 minutes or until lightly browned
6. Remove from oven; cool completely on wire racks.
7. Frost with Lemon Glaze if desired
8. Store cookies in airtight container for up to one week

Lemon Glaze : In a small bowl, whisk together 1 cup confectioners' sugar and 2 table spoon lemon juice until smooth.
