Ingredients :
2 cups
all purpose flour
1.5 tea
spoon baking soda
1/3 cup
margarine, softened
1/2 cup
honey
1/4 cup
sugar
1 table
spoon grated lemon peel
1/4 cup
Egg Beaters
Lemon
Glaze, optional (recipe follows)

Method :
- In a small bowl, combine flour and baking
soda; set aside
- In a large bowl, with electric mixer at
medium speed, beat margarine, honey, sugar and lemon peel until
light and fluffy
- Beat in egg product
- Gradually stir in flour mixture until
blended
- Drop dough by rounded teaspoons onto
lightly greased baking sheet; bake at 350 degrees 7-8 minutes or
until lightly browned
- Remove from oven; cool completely on wire
racks.
- Frost with Lemon Glaze if desired
- Store cookies in airtight container for up
to one week
Lemon Glaze : In a small bowl, whisk
together 1 cup confectioners' sugar and 2 table spoon lemon juice until
smooth.
