Ingredients :

Lemon Icing
2 cups
30g
1 tbsp
brown sugar
honey
self-raising flour, sifted
cinnamon
egg
butter, softened
milk
icing sugar, sifted
lemon juice
rind of 1 lemon
Preheat oven to 180C and grease a 20cm sandwich cake tin.
Place all ingredients in a bowl and beat well for 4-5 minutes until smooth.
Pour into prepared tin and bake for 30 minutes until cooked.
Ice when cool with lemon icing and sprinkle with lemon rind.
To prepare icing: combine all ingredients in a bowl and beat until light and fluffy.
If mixture is too thick, thin with a little hot water.
Makes 1 cake
