Coconut Layer Cake Recipes

Ingredients :

plain flour

coconut milk

egg yolks, beaten

caster sugar

butter melted

green cardamom pods, crushed

pinch freshly grated nutmeg

natural yogurt and slices banana, to serve

Method :
  1. Put flour in mixing bowl, whisk in coconut milk, egg yolks, sugar, cardamom seeds and nutmeg, then leave batter to stand for 30 minutes.

  2. Preheat over to 220c.

  3. Butter and line the base of a 15 cm dish.

  4. Add 1 tablespoon butter to dish and heat in oven for 5 minutes.

  5. Pour in 5-6 tablespoons of batter and bake for 10-15 minutes, until firm to touch and lightly browned.

  6. Continue adding another 3 layers, brushing cooked layer with butter before adding , then cooking each layer for 10-15 minutes.

  7. Put dish in a roasting tin half filled with boiling water, then continue adding final 3 layers in same way as before.

  8. When last layer is cooked remove dish from oven and leave to cool.

  9. Run a knife around edge of dish to loosen cake and turn out onto a serving plate.

  10. Serve warm, with yogurt and sliced bananas.
