Corn Flour Sponge Recipes

Ingredients :

1/3 cup

1/2 cup

1.5 tsp

2 tbsp

1 tsp

eggs

caster sugar

cornflour

plain flour

baking powder

hot water

melted butter

Method :
  1. Preheat oven to 180C, grease and flour two 20cm sandwich tins.
  2. Place egg whites in a clean, dry bowl.
  3. Beat until stiff peaks form.
  4. Gradually add sugar.
  5. Beat until thick and glossy.
  6. Fold in egg yolks and combine.
  7. Sift together corn flour, flour and baking powder 3 times.
  8. Gently fold into mixture with water and melted butter.
  9. Divide mixture evenly between prepared tins.
  10. Bake for 15-20 minutes or until cake springs back when touched.
  11. Remove from tins.
  12. Cool on a tea-towel placed on a cake rack.
  13. When cool sandwich together with filling of your choice.

Makes 1 cake
