Creamy Plum Cheesecake Recipe

Ingredients :

125g butter

2 tbsp golden syrup

300g digestive biscuits, finely crushed

350g yellow plums, stoned and sliced

50g ratafia biscuits, crushed

65g caster sugar

250g cottage cheese, sieved

250g cream cheese

150ml soured cream

To decorate:

ratafia biscuits

whipped cream

Method :
  1. Place the butter and syrup in a pan and heat gently until melted.
  2. Stir in the biscuit crumbs and spread over the base and up the side of a 23cm loose-bottomed cake tin.
  3. Arrange the plums on the biscuit base and sprinkle with the ratafia crumbs and 15g of the sugar.
  4. Beat together the cheeses, soured cream and the remaining sugar until well blended, then pour the mixture over the plums.
  5. Bake the cheesecake in oven, 300F, gas mark 2, 60 minutes.
  6. Turn off the heat and leave it in the oven until cool.
  7. Chill overnight or for several hours.
  8. Carefully transfer the cheesecake to a serving plate and decorate with ratafia biscuits and piped cream.
