Heat oven to
325F (160C). Grease a 9 x 5 x 3-inch (23 x 12.5 x 7.5-cm) loaf pan. Add
baking soda and boiling water to dates, stir and set aside to cool a
little. Beat brown sugar, egg, butter and vanilla together in a mixing
bowl. Stir in date mixture, raisins, maraschino cherries and cherry
juice. Sift flour, baking powder and salt together into the fruit
mixture and blend well. Spoon into prepared pan. Bake about 1 hour and
15 minutes.
