Method :

Sift the flour onto a work surface and
make a well in the center.

Add the butter, eggs, sugar, dessert
wine, salt and orange rind.

Gradually combine with the flour and
knead well.

The dough should be soft but hold its
shape well.

Cover with a clean cloth and leave to
rest for 30 minutes.

Roll out into a thin sheet using a
lightly floured rolling pin.

Cut into diamonds, rectangles, and
broad rectangular strips which can be tied loosely into a knot if
wished.

Heat the oil to very hot and fry a few
at a time until pale golden brown all over.

Remove with a slotted spoon and drain
on paper towels.

Serve at once, sprinkled with
confectioners' sugar.
