Fried Carnival Cookies With Confectioner's Sugar Recipe

Ingredients :

250 g

2 tablespoons/ 30 g

plain flour

butter

eggs

granulated or caster sugar

grated orange rind

Vin Santo or other good quality sweet dessert wine

extra virgin olive oil for frying

confectioner's or icing sugar, sifted

Method :
  1. Sift the flour onto a work surface and make a well in the center.

  2. Add the butter, eggs, sugar, dessert wine, salt and orange rind.

  3. Gradually combine with the flour and knead well.

  4. The dough should be soft but hold its shape well.

  5. Cover with a clean cloth and leave to rest for 30 minutes.

  6. Roll out into a thin sheet using a lightly floured rolling pin.

  7. Cut into diamonds, rectangles, and broad rectangular strips which can be tied loosely into a knot if wished.

  8. Heat the oil to very hot and fry a few at a time until pale golden brown all over.

  9. Remove with a slotted spoon and drain on paper towels.

  10. Serve at once, sprinkled with confectioners' sugar.

Serves 4

Preparation        : 20 minutes + 30 minutes standing

Suggested wine  : a sweet, medium or dry dessert wine (Vin Santo)

Note : Cenci (which means "rags" are traditionally served during Carnivale, the period leading up to Lent before Easter.
