Genoise Sponge Recipes

Ingredients :

eggs

caster sugar

plain flour, sifted

butter, melted

Method :
  1. Preheat oven to 180C, grease and flour two 20cm sandwich tins.
  2. Place egg an dsugar into a mixer and beat on high speed for 10 minutes.
  3. Mixture should be very pale, frothy and quite thick in consistency.
  4. Remove beaters, using a metal spoon fold in sifted flour and melted butter until just combined.
  5. Divide mixture evenly between prepared tins.
  6. Bake for 20-25 minutes or until cake springs back when touched.
  7. Remove frmo tins.
  8. Cool on a tea-towel placed on a cake rack.
  9. When cold, fill with cream and sprinkle with icing sugar.

Makes 2 x 20cm cake
