Genoise Sponge Recipes

Method :
- Preheat oven to 180C, grease and
flour two 20cm sandwich tins.
- Place egg an dsugar into a mixer
and beat on high speed for 10 minutes.
- Mixture should be very pale,
frothy and quite thick in consistency.
- Remove beaters, using a metal
spoon fold in sifted flour and melted butter until just combined.
- Divide mixture evenly between
prepared tins.
- Bake for 20-25 minutes or until
cake springs back when touched.
- Remove frmo tins.
- Cool on a tea-towel placed on a
cake rack.
- When cold, fill with cream and
sprinkle with icing sugar.
Makes 2 x 20cm cake
