Preheat oven to 180C and grease a
20cm ring cake tin.

Sift flour, soda and spices 3 times
into a mixing bowl.

Add all remaining ingredients and beat
at medium speed with an electric mixer for five minutes, scraping
down sides of bowl occasionally.

Turn batter into prepared tin and bake
for 20 minutes.

Reduce oven temperature to 160C.

Continue baking for 35-40 minutes
until cooked when tested.

Turn out onto a wire rack and stand
for 15 minutes before removing tin.

Cool completely.

Wrap in waxed paper and store
overnight before cutting the cake.

Serve plain or with a thin lemon
icing.
