Layered Tapioca Cake Recipe

Ingredients :

tapioca, grated finely

fresh red chilies

shallots

garlic

dried shrimps, pounded

thick coconut milk, extracted from 1 coconut

tamarind juice

oil

salt and sugar to taste

Method :
  1. Mix together the coconut milk and the grated tapioca.
  2. Heat oil and fry the pounded chilies, shallots and garlic until fragrant.
  3. Add in the dried shrimps and fry for 10 minutes.
  4. Add in the tamarind juice, salt and sugar and fry for 5 minutes.
  5. Remove from the fire.
  6. In an oven proof dish, put in the tapioca mixture alternated with the fried ingredients in layers.
  7. Bake in a moderate oven.

Serves 6 - 8
