Layered Tapioca Cake Recipe

tapioca,
grated finely
fresh red
chilies
shallots
garlic
dried
shrimps, pounded
thick
coconut milk, extracted from 1 coconut
tamarind
juice
oil
salt and
sugar to taste |
Method :
- Mix together the coconut milk and the
grated tapioca.
- Heat oil and fry the pounded chilies,
shallots and garlic until fragrant.
- Add in the dried shrimps and fry for
10 minutes.
- Add in the tamarind juice, salt and
sugar and fry for 5 minutes.
- Remove from the fire.
- In an oven proof dish, put in the
tapioca mixture alternated with the fried ingredients in layers.
- Bake in a moderate oven.
Serves 6 - 8
