Pineapple Crunch Cakes Recipes

8.75-ounce can (1 cup) crushed pineapple

shortening

granulated sugar

vanilla

egg

sifted all-purpose flour

baking powder

salt

flaked coconut

brown sugar

chopped walnuts

butter or margarine, melted

Method :
  1. Drain pineapple thoroughly, reserving 1/2 cup syrup.

  2. Thoroughly cream shortening, granulated sugar, and vanilla.

  3. Add egg; beat well.

  4. Sift together dry ingredients; add to creamed mixture alternately with reserved syrup, beating after each addition.

  5. Spread half of the batter evenly in greased and floured 8x1.5 inch cake pan; spoon pineapple over.

  6. Cover with remaining batter.

  7. Combine coconut, brown sugar, walnuts, and butter; sprinkle over batter.

  8. Bake in moderate oven (350°) about 35-40 minutes or till done.

  9. Cut in wedges.

  10. Serve warm with ice cream.
