Pineapple Slices Recipes

drained, canned crushed pineapple

self-raising whole meal flour

ground hazelnuts

mixed spice

 

cream cheese, softened

drained, canned crushed pineapple

honey

Method :
  1. Preheat oven to 180C.

  2. Grease a 30x25cm baking tin and line with baking paper.

  3. In a large bowl, combine carrots, oil, honey, eggs and pineapple.

  4. Mix well, sift together flour, hazelnuts and spice three times.

  5. Add roughage left in sifter.

  6. Stir into carrot mixture with a wooden spoon until blended.

  7. Turn batter into prepared tin, spreading evenly.

  8. Bake 30-35 minutes until a skewer inserted in the centre comes out clean.

  9. Briefly cool in tin, turn out onto a wire rack and cool completely.

  10. To prepare topping: in a bowl use an electric mixer to beat cream cheese, pineapple and honey.

  11. Spread over top of cake.

  12. Chill until needed.

  13. Cut into slices to serve.
