Plum Cake Recipes

Ingredients :

500g

3/4 cup

1 cup

purple plums, halved and stoned

caster sugar or more

unsalted butter, softened

grated lemon rind

eggs, separated

self-raising flour, sifted

Method :
  1. Preheat oven to 180C.

  2. Grease a 23cm spring form tin, line base with paper and grease paper.

  3. Slice plums thinly and sprinkle with 3 tbsp sugar.

  4. Cream butter, lemon rind and remaining sugar until light and fluffy.

  5. Beat in egg yolks one at a time, beating until combined.

  6. Stir in flour.

  7. Beat egg whites until stiff then fold into cake mixture.

  8. Pour mixture into prepared tin, spreading evenly.

  9. Arrange drained plum slices over top and, if they are very tart, sprinkle with 1-2 tbsp more sugar.

  10. Bake for 40-50 minutes.

  11. Stand for three minutes in tin before turning out onto a cake rack.

  12. Remove paper.

  13. Serve for afternoon tea, as a dessert cake with whipped cream or with a light sprinkling of icing sugar.
