Rich Wholemeal Fruit Cake Recipe

Ingredients :

blanched almonds, chopped

mixed dried fruit

each of dried pears, peaches and apricots, chopped

raisins

orange juice

brandy

wholemeal flour

plain flour

butter, softened

mixed spice and cinnamon

eggs, beaten

treacle

Method :
  1. Preheat oven to 150C, line a 23cm round or square cake tin with a layer of brown paper then a layer of baking paper.

  2. In a pan combine almonds, dried fruits, raisins and orange juice.

  3. Heat until boiling, stirring constantly.

  4. Add brandy, stand pan in a sink of cold water to cold quickly (stir occasionally).

  5. In a large mixing bowl, place flours, butter, spices, eggs and treacle.

  6. Thoroughly beat with an electric mixer until well blended, stir in cooled fruit mixture.

  7. Turn into prepared tin, smoothing the surface.

  8. Bake for 90 minutes or until cooked and firm to touch (loosely cover with foil after the first 45 minutes).

  9. Cool in tin and wire rack.

  10. Remove from tin and wrap in plastic wrap, foil or greaseproof paper.

  11. Store airtight in a cool, dry, dark place for up to 1 month before serving.
