Salted Peanut Jumbos Recipes

Ingredients :

1 cup soft shortening (half butter)

1.5 cups brown sugar, packed

2 eggs

3.75 cups sifted all-purpose flour

1.5 tsp baking soda

1 tsp baking powder

1 tsp salt

1/2 cup milk

2.5 cups bran flakes (ready to eat cereal)

1.5 cups chopped salted peanuts

Method :

Beat shortening, sugar and eggs together until fluffy. Sift flour, baking soda, baking powder and salt together and add to first mixture alternately with the milk. Blend in bran flakes and peanuts. Chill until firm, about 60 minutes. Heat oven to 375F (190C). Grease cookie sheets. Drop dough by rounded tablespoonfuls about 3 inches (7.5cm) apart on cookie sheets. Bake 12-15 minutes or until nicely browned and set.

 

Makes about 3.5 dozen large cookies
