Spiced Banana Cake Recipes

self-raising flour
plain flour
mixed spice
butter, cut in pieces
bicarbonate of soda
buttermilk
mashed bananas
egg, beaten |
Method :
-
Preheat oven to 180C and grease a
23cm square sandwich cake tin.

Sift sugar, flours and spice 3 times
into a mixing bowl.

Rub in butter pieces until mixture
resembles crumbs.

Press half the mixture into prepared
tin.

Dissolve soda in buttermilk.
-
Stir in mashed bananas and beaten egg.
-
Beat this mixture into remaining half
of the crumb mixture and pour into prepared tin.

Bake for 40-45 minutes.

Leave for 5-10 minutes in tin and then
carefully turn out on a wire cake rack to cool.
Makes 1 cake
