Spiced Rock Cakes Recipe

Ingredients :

wheat meal self raising flour

mixed spice

margarine

brown sugar

raisins

stoned dates, finely chopped

egg, lightly beaten

milk to mix

pinch salt

Method :
  1. Heat the oven to 200oC (400oF), Gas 6.

  2. Lightly grease a baking tray.

  3. Sift together the flour, salt and ginger and add any bran remaining in the sieve.

  4. Rub in the margarine until the mixture resembles fine bread crumbs.

  5. Stir in the sugar, raisins and dates.

  6. Beat together the egg and milk, pour on to the dry ingredients and mix to stiff dough, using a little more milk if necessary.

  7. Place heaped teaspoonfuls of the mixture well apart on the  baking tray.

  8. Bake near the top of the oven for 15 minutes, until well risen and firm.

Makes 12 cakes
