Spicy Carrot Cake Recipes

plain flour

baking powder

bicarbonate of soda

mixed spice

nutmeg

sunflower oil

sugar

eggs, beaten

chopped nuts

large carrot, grated

 

icing sugar, sifted

grated lemon rind

lemon juice

Method :
  1. Preheat oven to 180C.

  2. Grease and flour a 20cm square cake tin.

  3. Sift flour, baking powder, bicarbonate and spices three times into a bowl.

  4. Combine oil, sugar and beaten eggs.

  5. Stir into flour mixture.

  6. Add nuts and grated carrot and blend well.

  7. Spoon into prepared tin and bake for 45 minutes, or until cooked when tested.

  8. Turn out and brush top and sides with glaze while hot.

  9. To prepare glaze: combine icing sugar, lemon rind and lemon juice.

  10. Use at once.

Makes 1 cake
