icing sugar, sifted
orange or lemon juice
few drops vanilla essence |
Method :

Sift flour, baking powder and
bicarbonate of soda together into a bowl.

Blend in all remaining ingredients,
mix well.

Pour into a greased and lined 18x28cm
lamington pan.

Bake in a moderate oven 180C (350F)
for 30-35 minutes or until a skewer inserted into the centre of the
cake comes out clean and dry.

Turn onto a wire rack to cool.

To prepare icing: Cream butter and
cream cheese together until smooth.

Gradually blend in icing sugar, juice
and vanilla until creamy.

Spread over cooled cake.

Store, cut into squares, in an
airtight container.
