Succulent Carrot Slice Recipes

Ingredients :

baking powder

bicarbonate of soda

brown sugar

grated carrot

drained crushed pineapple

chopped walnuts

eggs

oil

each cinnamon and nutmeg

 

butter or margarine

cream cheese

icing sugar, sifted

orange or lemon juice

few drops vanilla essence

Method :
  1. Sift flour, baking powder and bicarbonate of soda together into a bowl.

  2. Blend in all remaining ingredients, mix well.

  3. Pour into a greased and lined 18x28cm lamington pan.

  4. Bake in a moderate oven 180C (350F) for 30-35 minutes or until a skewer inserted into the centre of the cake comes out clean and dry.

  5. Turn onto a wire rack to cool.

  6. To prepare icing: Cream butter and cream cheese together until smooth.

  7. Gradually blend in icing sugar, juice and vanilla until creamy.

  8. Spread over cooled cake.

  9. Store, cut into squares, in an airtight container.
