Tea Cake Recipe

Ingredients :

self-raising flour

sugar

butter or margarine

sultanas (optional)

egg, beaten

milk

pinch of salt

Method :
  1. Preheat oven to 180C Gas Mark 4.

  2. Grease and flour a 20cm square tin.

  3. Sift the flour and salt into a bowl.

  4. Add the sugar and run in the butter.

  5. Stir in the sultanas, if using.

  6. Add the beaten egg and milk, and mix to a soft consistency.

  7. Turn in to the sandwich tin and bake for 30 minutes.

  8. Serve with butter spread.

Makes 12 slices

Add 1/2 tsp ground cinnamon or a little grated lemon or orange zest.
