Walnut Cake Recipes

Ingredients :

Orange Icing

butter, softened

caster sugar

eggs

self-raising flour

plain flour

milk

finely chopped walnuts

whipped cream

 

unsalted butter

icing sugar, sifted

orange juice

Method :
  1. Preheat oven to 180C.

  2. Grease two 20cm sandwich cake tins, line with paper and grease paper.

  3. To prepare cake: cream butter and sugar in a bowl with an electric mixer until light and fluffy.

  4. Beat in eggs, one at a time, beating until combined.

  5. Sift together flours and fold in alternately with milk, then fold in walnuts.

  6. Pour mixture into prepared tins and bake for about 30 minutes.

  7. Stand for 3-4 minutes in tins before turning out onto a cake rack.

  8. Remove paper.

  9. When cold, join together with whipped cream (add a little grated orange rind, if you wish) and top with icing.

  10. To prepare icing: melt butter, stir in icing sugar and orange juice and beat until smooth.

Makes 1 cake
