Zucchini (Courgette) Cake Recipes

Ingredients :

butter or margarine

caster sugar

eggs

self-raising flour, sifted

grated zucchini (courgette)

chopped pecans

orange juice

milk

cinnamon

grated rind 1 orange

Method :
  1. Cream butter and sugar together until light and fluffy.

  2. Beat in rind, add eggs on at a time, beating well after each addition.

  3. Lightly blend in all remaining ingredients.

  4. Pour into a greased 15x25cm loaf pan.

  5. Bake in a moderate oven 180C (350F) for 45 minutes or until a skewer inserted in the centre of the cake comes out clean and dry.

  6. Turn onto a wire rack to cool.

  7. Dust with icing sugar.

  8. Serve sliced with butter.
