Chocolate Eggnog Tortoni Recipes

Ingredients :

3/4 cup cold milk

4-oz pkg instant chocolate pudding mix

1 1/4 cups commercial eggnog

1/2 tsp vanilla

1/2 tsp almond extract

1/2 cup whipping cream

2/3 cup finely crushed vanilla wafers

1/2 cup finely chopped blanched almonds, toasted

1/2 cup flaked coconut, toasted

whole toasted almonds

maraschino cherries

Method :

Put milk in small mixer bowl. Add pudding mix and mix on low speed until blended. Gradually beat in eggnog. Stir in vanilla and almond extract. Whip cream until stiff peaks form and fold into chocolate mixture. Fold in vanilla water crumbs, chopped almonds and coconut. Line 12 muffin cups with large-size paper baking cups. Spoon the mixture into cups, filling right to top. Cover muffin pan with aluminum foil and freeze chocolate mixture until firm, 4 hours or overnight. Garnish top of each little dessert with whole toasted almonds and a maraschino cherry and set each top on a doily on serving plate.

Makes 12 small desserts
