Classic Cheesecake Recipes

Ingredients :

1 cup sweet biscuit crumbs

80g butter, melted

750g cream cheese

3/4 cup castor sugar

2 tbsp lemon juice

2 eggs, lightly beaten

Method :

Combine biscuit crumbs with melted butter and press into the base of a lightly greased springform cake tin. Chill for 30 minutes or until set. Preheat the oven to 150C.

With an electric mixer, beat cream cheese until smooth. Add sugar, lemon juice and eggs and continue to beat until smooth.

Carefully pour cheese mixture onto prepared biscuit crust and bake for 60 minutes. Allow to cool well before serving.
