Coffee Parfait Recipe

Ingredients : |

1 tbsp instant coffee powder
1 tsp drinking chocolate powder
2 tsp boiling water
1/4 tsp vanilla extract
300ml whipping cream
2 egg whites
50g caster sugar
40g plain dark chocolate, grated
fan wafers, to serve |
Method :

Dissolve the coffee and drinking
chocolate in the boiling water in a cup, leave to cool, add vanilla
extract.

Whisk the cream in a bowl until stiff,
fold in the coffee and chocolate mixture, using a metal spoon.

Whisk the egg whites in a grease free
bowl until stiff peaks form, add sugar, whisk well until stiff and
glossy.

Lightly fold the egg whites and 2/3 of
the grated chocolate into the cream mixture.

Spoon the mixture into 6 individual
serving dishes, sprinkle with the remaining grated chocolate and
serve chilled, with fan wafers.
