Dissolve the coffee and drinking
chocolate in the boiling water in a cup, leave to cool, add vanilla
extract. Whisk the cream in a bowl until stiff,
fold in the coffee and chocolate mixture, using a metal spoon. Whisk the egg whites in a grease free
bowl until stiff peaks form, add sugar, whisk well until stiff and
glossy. Lightly fold the egg whites and 2/3 of
the grated chocolate into the cream mixture. Spoon the mixture into 6 individual
serving dishes, sprinkle with the remaining grated chocolate and
serve chilled, with fan wafers.
