Mulled Wine Recipe


  1. Push 12 cloves into 2 oranges and place in a saucepan with 1/4 cup (60g) sugar, 1 whole nutmeg, grated, 4 cinnamon sticks and 2 thinly sliced lemons.

  2. Add 2 cups (500ml) water and bring to the boil, then reduce the heat, cover the pan and simmer for 20 minutes.

  3. Cool, then strain and discard the fruit and spices.

  4. Pour the mixture into a saucepan, add 3 cups (750ml) full-bodied red wine and heat until almost boiling - do not boil or the alcohol will evaporate.

  5. Serve in heatproof glasses.
