Pineapple and Coconut Iced Drink Recipes

Ingredients :

500ml fresh pineapple juice

250ml coconut milk

mint leaves, to garnish

pineapple leaves, to garnish

Combine the pineapple juice with the coconut milk in a large jug and mix well. Pour 125ml of the mixture into eight holes of an ice cube tray and freeze. Chill the remaining mixture in the refrigerator. When the ice cubes have frozen, pour the chilled juice mixture into two glasses, add the frozen cubes and garnish with the mint and pineapple leaves.
