Seafood Avocado Cocktail Recipes

Ingredients :

6-oz can lobster, broken up coarsely

4 1/2-oz can small shrimp (cocktail size)

5-oz can crab, flaked

3 3/4-oz can tuna, broken up coarsely

2 tsp capers

2 tsp chopped chives

2 tsp chopped parsley

1/2 cup commercial sour cream

1/3 cup mayonnaise

1/4 tsp dry mustard

2 tsp caper juice

1/4 tsp salt

dash pepper

2 large ripe avocados ( or 4 small)


Method :

Combine lobster, shrimp, crab, tuna, capers, chives and parsley in a bowl and toss together lightly with a fork. Blend sour cream, mayonnaise, mustard, caper juice, salt and pepper and add to seafood. Toss again lightly with a fork. Cover and chill well. Serve over wedges of avocado set on lettuce or, if you have small avocados, fill a half for each serving.
