Strawberry and Watermelon Cocktail Recipes

Ingredients :

800g piece watermelon

250g strawberries, quartered

1 tsp finely grated lemon rind

1 tbsp lemon juice

2 tsp dry sherry

75g caster sugar

160ml water

Method :

Remove and discard skin from watermelon; cut into 2cm cubes, removing seeds. Combine melon and strawberries in large heatproof bowl. Combine rind, juice, sherry, sugar and water in medium pan, stir over heat, without boiling, until sugar dissolves. Bring to boil; simmer, uncovered, about 5 minutes or until thickened slightly.

Pour hot syrup over fruit in bowl. Cover, refrigerate until cold.
