Blackcurrant Tofu Whip Recipes

Ingredients :

450 g

3 tablespoons

3 tablespoons

125 g

fresh or frozen blackcurrants

clear honey

cassis sirop

silken tofu

Method :
  1. Reserve a few blackcurrants to decorate.

  2. Put the remainder in a pan with the honey and simmer over very low heat until the juice runs.

  3. Liquidize in a blender with the sirop and tofu.

  4. Pour into 4 individual serving glasses and chill.

  5. Decorate with the reserved currants.

Serves 4

Note : 125 g packet of silken tofu is a compact way of taking natural high quality vegetable protein and contains only about 65 calories. Made from Soya beans, it is free of cholesterol and high in polyunsaturated fats. Tofu is however characteristically low on flavor and looks like a block of milky white blancmange. Spark it up with the refreshing flavor of fresh or frozen soft fruits.
