Chocolate Puddle Pudding Recipes

Ingredients :

8 oz plain chocolate, broken into pieces

1/2 pint milk

2 tbsp brandy (optional)

2 oz unsalted butter, softened

5 oz caster sugar

2 eggs, separated

1 oz self-raising flour

1 oz cocoa powder, plus extra for dusting

whipped cream, to serve

Method :
  1. Put the chocolate in a small saucepan with the milk and heat gently until the chocolate has melted.

  2. Stir in the brandy, if using.

  3. Beat together the butter and sugar until pale and creamy.

  4. Gradually beat in the egg yolks, flour, cocoa and melted chocolate mixture.

  5. Whisk the egg whites in a separate bowl until they hold their shape.

  6. Using a large metal spoon, fold a quarter of the egg whites into the chocolate mixture, then fold in the rest of the egg whites.

  7. Turn into a 2.5 pint pie dish and place the dish in a roasting tin.

  8. Pour boiling water into the tin to a depth of 1 inch.

  9. Bake in a preheated oven, 350F, gas mark 4, for about 35 minutes until a crust has formed.
