Ingredients :

1 teaspoon
1/2 teaspoon
slices day old bread, cut from a large loaf
cooking apples, peeled, cored and sliced
plums or greengages, stoned and halved
light Muscovado sugar
coriander seeds
ground coriander
Cut the crusts from the bread and spread each slice on one side with the low fat spread.
Line a greased 2 pt (1 liter) pie dish with the bread, spread side down.
Cover with the apple and plums or greengages and sprinkle with coriander seeds and half the sugar.
Cover with the remaining bread, spread side up.
Sprinkle with the remaining sugar mixed with the coriander.
Bake in the oven at 375F (190oC), Gas 5 for 1-11/4 hours, until the bread topping is crisp.
Serve hot.
