Cottage Pudding Recipe

Ingredients :

1 3/4 cups sifted all-purpose flour

2 tsp baking powder

1/2 tsp salt

3/4 cup sugar

1/4 cup soft shortening

1 egg

3/4 cup milk

1 tsp vanilla

Blueberry Sauce or Golden Citrus Sauce

Method :

Heat oven to 375F (190C). Grease a 9-inch (23-cm) square pan. Sift flour, baking powder, salt and sugar into a bowl. Add shortening, egg, milk and vanilla and beat hard until batter is smooth. Pour into prepared pan and bake 25-30 minutes or until top springs back when touched lightly in the center. Cut in large squares and serve warm with hot Blueberry Sauce or Golden Citrus Sauce.

Serves 6-9
