Figgy Pudding Recipe

Ingredients :

whole wheat self raising flour

baking powder

ground ginger

light Muscovado sugar

soft margarine

large eggs, lightly beaten

dried figs, chopped

clear honey

Method :
  1. This is a quick mix pudding.

  2. Beat together the flour, baking powder, ginger, sugar, margarine and eggs until the mixture is smooth.

  3. Stir in the figs.

  4. Pour the honey into the base of a greased 11/2 pt (1 liter) pudding basin.

  5. Pour in the mixture, cover with foil and a cloth and tie.

  6. Steam the pudding on a trivet over boiling water for 13/4 hours, topping up with more water as necessary.

  7. Heat all the sauce ingredients over low heat, stirring to dissolve the honey.

  8. Simmer gently for 5 minutes.

  9. Turn out the pudding and serve the sauce separately.
