Fruity Bread Pudding Recipes

Ingredients :

75g mixed dried fruit

150ml apple juice

115g brown or white bread, diced

5ml mixed spice

1 large banana, sliced

150ml skimmed milk

15ml demerara sugar

natural low fat yoghurt, to serve

Method :

Preheat the oven to 400F, Gas 6. Place the dried fruit in a small pan with the apple juice and bring to boil. Remove the pan from the heat and stir in the bread, spice and banana. Spoon the mixture into a shallow 1.2 liter ovenproof dish and pour over the milk. Sprinkle with demerara sugar and bake for 25-30 minutes, until firm and golden brown. Serve hot or cold with natural yoghurt.

Different types of bread will absorb varying amounts of liquid, so you may need to adjust the milk to allow for this. To make this pudding extra special use read to eat dried fruits, such as apricots, dates, figs, mangoes or pears, chopped roughly. A delicious family favorite pud from grandmother's day, with a lighter, healthier touch.
