Preheat the
oven to 400F, Gas 6. Place the dried fruit in a small pan with the apple
juice and bring to boil. Remove the pan from the heat and stir in the
bread, spice and banana. Spoon the mixture into a shallow 1.2 liter
ovenproof dish and pour over the milk. Sprinkle with demerara sugar and
bake for 25-30 minutes, until firm and golden brown. Serve hot or cold
with natural yoghurt.
Different
types of bread will absorb varying amounts of liquid, so you may need to
adjust the milk to allow for this. To make this pudding extra special
