Place the gooseberries in a pan
with the sugar and elderflowers, if using.
Cover, cook 10-15 minutes until
tender.
Remove the elderflowers and leave
to cool.
Rub through a sieve or work in a
blender until smooth.
Fold the cream and coloring, if
using, into the fruit mixture.
Spoon into individual dishes and
chill before serving with biscuits.

The flavors of gooseberries and
elderflowers combine beautifully in desserts. If you do not have any
elderflowers, try using a little elderflower cordial instead: add 1-2
tsp to the gooseberries and sugar as they cook.
