Gooseberry Fool Recipes

Ingredients :

500g gooseberries, topped and tailed

150g caster sugar

2 elderflower heads, tied in muslin (optional)

250ml whipping cream, whipped

few drops of green food coloring (optional)

biscuits, to serve

Method :
  1. Place the gooseberries in a pan with the sugar and elderflowers, if using.
  2. Cover, cook 10-15 minutes until tender.
  3. Remove the elderflowers and leave to cool.
  4. Rub through a sieve or work in a blender until smooth.
  5. Fold the cream and coloring, if using, into the fruit mixture.
  6. Spoon into individual dishes and chill before serving with biscuits.

Serves 5

The flavors of gooseberries and elderflowers combine beautifully in desserts. If you do not have any elderflowers, try using a little elderflower cordial instead: add 1-2 tsp to the gooseberries and sugar as they cook.
