Half Pay Pudding Recipe

Ingredients :

wheat meal self raising flour

baking powder

mixed spice

whole meal bread crumbs

brown sugar

margarine

mixed dried fruits - currants, sultanas and seedless raisins

pinch grated nutmeg

Method :
  1. Bring a large pan of water to the boil.
  2. Grease a pudding basin.
  3. Sift together the flour, baking powder and spices and add any bran remaining in the sieve.
  4. Stir in the bread crumbs and sugar and rub in the margarine.
  5. Add just enough milk to mix to a soft dropping consistency.
  6. Stir in the dried fruits.
  7. Turn into the bowl or basin, cover with greased foil, tie securely and stand on a trivet in the pan of boiling water.
  8. Cover the pan and steam for 2 hours, topping up the water as necessary with boiling water.
  9. Turn out the pudding on to a heated serving dish.
  10. Serve hot.

Serves 6
