Hot Plum Batter Pudding Recipes

Ingredients :

450g ripe red plums, quartered and stoned

200ml skimmed milk

60ml skimmed milk powder

15ml light muscovado sugar

5ml vanilla essence

75g self raising flour

2 egg whites

icing sugar, to sprinkle

Method :

Preheat the oven to 425F, Gas 7. Lightly oil a wide, shallow ovenproof dish and add the plums. Pour the milk, milk powder, sugar, vanilla, flour and egg whites into a food processor. Process until smooth. Pour the batter over the plums. Bake for 25-30 minutes, or until puffed and golden. Sprinkled with icing sugar and serve immediately.

If you don't have a food processor, then place the dry ingredients for the batter in a large bowl and gradually whisk in the milk and egg whites. Other fruits can be used in place of plums, depending on the season. Canned black cherries are also a convenient store cupboard substitute.
