Moroccan Rice Pudding Recipes

Ingredients :

1 liter pints milk

50g short-grain pudding rice, rinsed and drained

50g sugar

1.5 tbsp orange flower water

To decorate:

chopped pistachio nuts

chopped almonds

crystallized violets or rose petals

Method :
  1. Heat the milk.

  2. Sprinkle over the rice and bring to boil, stir.

  3. Lower the heat and cook gently, stir, until the pudding is thick, velvety and falls easily from the spoon.

  4. This may takes up to 2 hours.

  5. Use a heat diffusing mat, to prevent the rice cooking too quickly and sticking to the pan.

  6. When the rice pudding is cooked, stir in the sugar and the orange flower water, to taste.

  7. Pour into a serving dish or into individual dishes.

  8. Serve warm or cold with pistachio nuts, almonds and crystallized violets or rose petals scattered over the top.
