Plantation Pudding Recipes

Ingredients :

1 large onion

1 cup corn kernels, frozen or fresh

2 large tomatoes

butter

salt, pepper, basil

whole meal crumbs, fresh

Method :
  1. Grease 1 liter casserole with butter and place ingredients in layers, this : onion slices, corn, tomato slices, pepper, salt and basil.
  2. Dot with butter and repeat until ingredients are all used up.
  3. Top with crumbs and a last dot or two of butter.
  4. Bake slowly and serve in spoonfuls with a pancake luncheon.

Serves 4 - 6
