Rice Pudding with Sultanas Recipes

Ingredients :

cooking oil spray

100g white short grain rice

625ml skim milk

55g caster sugar

2 tbsp sultanas

1 tsp vanilla essence

2 tsp soft butter

grated nutmeg

Method :

Coat 1 liter (4 cup) shallow ovenproof dish with cooking oil spray. Wash rice well under cold water; drain. Combine rice, milk, sugar, sultanas and essence in prepared dish, mix lightly with a fork. Top with butter, sprinkle with nutmeg.

Bake, uncovered, in moderately slow oven about 2 hours or until most of the milk has been absorbed. Serve warm or cold with fresh or poached fruit, if desired.
